Savoury Hainanese Beef Noodles with Flavourful Oxo Bouillon Broth

Here's a simple Hainanese Beef Noodles recipe using Oxo beef bouillon cubes to enhance the flavor of the broth:

Ingredients:

For the Broth:

  • 2 Oxo beef bouillon cubes
  • 8 cups water
  • 1 onion, peeled and halved
  • 3 cloves garlic, smashed
  • 1 thumb-sized ginger, sliced
  • 1 cinnamon stick
  • 2 star anise
  • 2 cloves
  • 1 teaspoon fennel seeds
  • 1 teaspoon coriander seeds
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

For the Beef:

  • 300g beef (flank, sirloin, or any lean cut), thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

For Serving:

  • Cooked egg noodles or rice noodles
  • Sliced green onions
  • Fresh cilantro leaves
  • Bean sprouts
  • Lime wedges
  • Chili sauce or sambal (optional)

Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger. Sauté until fragrant.
  2. Add the cinnamon stick, star anise, cloves, fennel seeds, and coriander seeds. Sauté for a minute until the spices release their aroma.
  3. Dissolve the Oxo beef bouillon cubes in 8 cups of hot water. Pour the broth into the pot with the sautéed aromatics.
  4. Bring the broth to a simmer and let it cook for about 20-30 minutes to allow the flavors to develop. Season with salt and pepper to taste.
  5. While the broth is simmering, marinate the thinly sliced beef with soy sauce, sesame oil, salt, and pepper. Set it aside to marinate for at least 15 minutes.
  6. Cook the egg noodles or rice noodles according to the package instructions. Drain and set aside.
  7. Strain the broth to remove the aromatics and spices, leaving a clear and flavorful broth.
  8. In a separate pot of boiling water, blanch the marinated beef slices for about 1-2 minutes until they're cooked to your preferred doneness. Remove and drain.
  9. To assemble, place a portion of cooked noodles in a bowl. Top with the blanched beef slices.
  10. Ladle the hot beef broth over the noodles and beef.
  11. Garnish with sliced green onions, fresh cilantro leaves, bean sprouts, and a lime wedge. Serve with chili sauce or sambal on the side if desired.
