May 26, 2020

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 4 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup chopped walnuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, ensuring each is fully incorporated. Add the mashed bananas and vanilla extract, mixing well.
  5. Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined. Do not overmix.
  6. If desired, fold in the chopped walnuts.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and allow the cake to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  10. Once cooled, slice and serve. Enjoy the moist and delicious banana cake!

Note: Feel free to add frosting or a dusting of powdered sugar on top for extra sweetness, if desired.
